Foil Pack Fish
This is hands down one of the top 3 ways to cook fish. This recipe is extremely easy and very tasty. You can use any type of fish but our pick would be wild salmon. Stock your freezer with frozen fish options from Trader Joes and Whole Foods and then defrost in fridge for 24 hours before using. Make sure you download your seafood pocket guide to carry with you to the grocery store.
4 individual portions of fresh or defrosted fish
2 Tbs. olive oil
1 medium onion sliced in rings or ½ rings
2 cloves garlic roughly chopped
1 big can diced tomatoes
2 Tbs. capers
2 Tbs. lemon juice
1 tsp each of basil, oregano, thyme or your favorite Italian spice blend
Preheat oven to 375. Mix ingredients in a bowl. You will need 4 squares of foil that have the sides folded up a little. On each square of foil place a little of the tomato mixture. Place the fish portion on top of that and then spoon over the rest of the tomato mixture dividing it equally. Pinch together the top of the foil so no steam escapes. Cook in the oven until the fish is steamed through- usually about 20-25minutes. Open each packet and enjoy! The complete menu idea would be to serve this fish with a side of quinoa and green beans.
